3 tropical pawpaw dishes

Pawpaw dishes

Try these refreshingly tasty and colourful pawpaw dishes from our Food Editor Ntwenhle Gcabashe.

1. Pawpaw and Rice Salad

Prep time: 20 minutes

Serves: 2

  • ½ pawpaw, deseeded and sliced
  • 1 cup brown rice, cooked
  • Handful baby spinach
  • ½ red onion, sliced
  • 1 avocado, sliced
  • Handful fresh coriander leaves
  • Salad dressing, for serving
  • Grilled chicken breast, for serving
  • 2 poached eggs, for serving
  • Lime wedges, for serving
  1. Arrange pawpaw, rice, spinach, onions, avocado and coriander leaves on a salad platter. Drizzle with salad dressing.
  2. Serve with grilled chicken, eggs and lime wedges.

2. Rainbow Parfait

Prep time: 15 minutes

Serves: 4–5

  • 1 cup pawpaw, mashed
  • 1 cup cream cheese
  • 1 tablespoon castor sugar
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon lemon zest
  • 1 cup coconut biscuits, crushed
  • Mint leaves, for serving
  • Pawpaw pieces, for serving
  • Strawberries, for serving
  • Blueberries, for serving
  1. In a bowl, whisk cream cheese until smooth. Add sugar, lemon juice and zest. Mix well.
  2. In a dessert bowl, layer crushed biscuits (reserve some for dusting), cream cheese mixture and pawpaw. Top with mint leaves, pawpaw pieces and berries.
  3. Dust with remaining biscuits. Refrigerate before serving.

3. Pawpaw Cheesecake

Prep time: 15 minutes

Serves: 7–8

  • ½ pawpaw, mashed
  • 1X packet biscuits
  • 1 cup white chocolate, chopped
  • ½ cup butter (melted)
  • 2 cups fresh cream, whipped
  • ½ cup icing sugar
  • Pawpaw slices, for serving
  • Crushed pistachio nuts, for serving
  1. Mix biscuits, chocolate and butter in a bowl. ress firmly into a lightly greased baking tin.
  2. In a separate bowl, mix cream and sugar until smooth. Add pawpaw and m
  3. Spoon mixture onto biscuit base. Smooth cake with the back of a dessert spoon. Refrigerate until set.
  4. Serve with pawpaw slices and crushed nuts.
