Sweetcorn cakes

sweetcorn cakes

Perfect as an in -between -meals snack or something small to eat, these sweetcorn cakes are a yummy treat by Ntwenhle Gcabashe

Prep time: 10 minutes

Cooking time: 8 minutes

Serves: 2–3

  • 1 cup creamy sweetcorn
  • 1 cup self-raising flour
  • 1 tablespoon castor sugar
  • Pinch salt
  • 1 egg, beaten
  • 3 tablespoons fresh chives, chopped
  • 2 tablespoons (30ml) oil

Filling

  • 1 canned tuna, drained
  • 2 tablespoons jalapenos, chopped
  • ½ cup mayonnaise
  • ½ cup cream cheese
  • Salt and pepper

 Savoury mince wheels

  1. Mix creamy sweetcorn, self-raising flour, sugar, salt, egg and chives. Mix well and form smooth batter.
  2. Heat oil in a frying pan. Spoon the dough, and fry for 5-8 minutes or until cooked.
  3. Meanwhile, mix tuna, jalapenos, mayonnaise and cream cheese. Season with salt and pepper.
  4. Serve with sweetcorn cakes.
