Salads are not just for summer, and Ntwenhle Gcabashe shows you how to make a hearty roasted tomato salad.

Serves: 4

  • 3 tomatoes, sliced
  • 1kg vine tomatoes,
  • 1kg yellow tomatoes
  • 1 cup pumpkin, roasted
  • Juice of 1 orange
  • 1 tablespoon orange zest
  • 4 tablespoons avocado oil
  • Salt and pepper
  • Handful fresh basil leaves, shredded
  • Handful baby spinach
  • Roasted chicken, for serving

Dressing

  • 4 tablespoons (60ml) balsamic reduction
  • 4 tablespoons (60ml) oil
  • 1 tablespoon sesame seeds
  1. Preheat the oven to 180ºC.
  2. Mix tomatoes, pumpkin, orange juice, zest and oil in a bowl. Season with salt and pepper. Roast until soft.
  3. For dressing, mix ingredients in a jug. Drizzle over salad. Serve with basil leaves, spinach and chicken.
