Pasta and Peppers Fritter

Prep time: 15 minutes Cooking time: 8 – 10 minutes Serve: 6 – 7 Medium

  • Half a 500g packet of FATTI’S & MONI’S Penne, cooked
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 red chili, chopped
  • ½ cup self-raising flour
  • 1 teaspoon cayenne pepper
  • 2 tablespoon fresh coriander, chopped
  • 1 egg beaten
  • ½ cup (125ml) milk
  • Salt and pepper to taste
  • Oil for frying
    1. Bring a pot of water to the boil. Add a pinch of salt and teaspoon of oil. Add FATTI’S & MONI’S Penne and boil till cooked.
    2. In a bowl, mix the cooked FATTI’S & MONI’S Penne, peppers, chili, flour, cayenne pepper and coriander.
    3. In a separate bowl, beat the egg and add the milk. Add to the bowl filled with dry ingredients and mix well. Add a pinch of salt and pepper to taste.
    4. Heat oil in a pot and add heaped tablespoons of the batter. Fry until golden.
    5. Serve immediately.
