Enjoy a delicious Middle Eastern delicacy with this easy to make falafel pita recipe by Ntwenhle Gcabashe
Prep time: 60 minutes
Cooking time: 3 minutes
Serves: 4
- 3 cups chickpeas, soaked
 - 1 tablespoon ground cardamom
 - 1 tablespoon ground cumin
 - 3 garlic cloves
 - Handful fresh coriander
 - 2 tablespoons cake flour
 - 3 shallot onions
 - Salt and pepper
 - Oil for frying
 - Pita bread for serving
 - Salad leaves for serving
 - Hummus, for serving

- Blend chickpeas, cardamom, cumin, garlic, coriander, flour, onions and pepper until smooth. Leave the mixture for 60 minutes.
 - Heat oil in a frying pan. Make small balls from the mixture, and fry for 2–3 minutes or until golden.
 - Cut the pita bread to form pocket. Fill with falafel, salad leaves and hummus.
 - Serve immediately.
