Recipe – delicious amagwinya stuffed with mince

Make your amagwinya even more tastier this winter with this easy mince stuffing recipe.

Serves: 5-6

Amagwinya

  • 4 cups cake flour
  • 10g instant yeast
  • 250ml castor sugar
  • 10ml salt
  • 3 cups (750ml) warm water
  • oil for frying

Mincemeat Stuffing

  • 2 tablespoon ( 30ml) oil
  • 2 garlic cloves, minced
  • 1 thumb size ginger, minced
  • 1 green chilli, chopped
  • 5ml ground turmeric
  • 5ml garam masala
  • 5 ml paprika
  • 1 cinnamon stick
  • 2 cups minced meat
  • 125ml canned tomatoes
  • 4 tablespoon tomato paste
  • ½ cup (125ml) stock
  • Handful coriander, chopped
  • Salt and pepper to taste

1. Combine amagwinya ingredients together to form soft dough. Cover with kitchen cloth and allow it to double in size.
2. Heat oil, fry garlic and ginger until soft. Add turmeric, cinnamon; mincemeat, tomatoes, paste and stock. Let it simmer until the sauce thickens. Season well. Finish with coriander.
3. In a separate frying pan, heat oil. Spoon the dough into hot oil, let it cook until golden.
4. Once cooked, stuff with minced mixture and serve.
