Mixed Summer Vienna Salad

Prep time: 10 minutes Serve: 3 – 4 Easy

  • 10 ENTERPRISE No Pork Viennas, grilled and cut into chunky slices
  • 2 handful salad leaves
  • 1 red onion, thinly sliced
  • 4 small beetroots, cooked and quarterly cut
  • ½ cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • Dressing to serve
  • Salt and pepper to taste
  1. In a large salad platter, arrange salad leaves.
  2. Top with sliced red onion, quartered beetroot and cherry tomatoes.
  3. Arrange grilled ENTERPRISE No Pork Viennas on top.
  4. Crumble feta cheese over the salad.
  5. Drizzle with dressing and serve.
