SWEET POTATO NACHOS
- 2 large sweet potatoes, thinly sliced and baked until crisp
- 2 large avocadoes, sliced
- 2 red chillies, chopped
- 2 cups canned sugar bean, drained
- 4 tablespoon parmesan cheese, grated
- ½ cup cheddar cheese, grated
- Preheat the grill to 200°C.
- Arrange sweet potatoes, avocados, chillies, beans and cheeses on an oven tray.
- Grill for 8-10 minutes and serve immediately.
