  • 3 tablespoons (45ml) oil
  • 1 large red onion, chopped
  • 4 large brinjals, chopped
  • 2 cups mushrooms, chopped
  • 2 cups (500ml) tomato paste
  • 1kg Jumbo shell, cooked
  • 1 cup parmesan cheese, grated
  • salt and pepper to taste
  1. Heat oil, fry onions until soft. Add the brinjals and mushrooms. Cook on a low heat. Season well with salt and pepper.
  2. Add paste. Let it simmer for another 10 minutes.
  3. Stuff the cooked pasta shells with the sauce. Sprinkle with cheese and serve.
