Ingredients
- 3 tablespoons (45ml) oil
 - 1 large red onion, chopped
 - 4 large brinjals, chopped
 - 2 cups mushrooms, chopped
 - 2 cups (500ml) tomato paste
 - 1kg Jumbo shell, cooked
 - 1 cup parmesan cheese, grated
 - salt and pepper to taste
 
Instructions
- Heat oil, fry onions until soft. Add the brinjals and mushrooms. Cook on a low heat. Season well with salt and pepper.
 - Add paste. Let it simmer for another 10 minutes.
 - Stuff the cooked pasta shells with the sauce. Sprinkle with cheese and serve.
