Ingredients
  • 1½kg boneless gammon
  • 1 tablespoon oil
  • 2 tablespoons curry paste
  • 1 cup couscous, cooked
  • 1 cup dried apples, chopped
  • 1 cup dried cranberries
  • ½ cup pine nuts
  • Salt and pepper to taste
  • ½ cup (125ml) maple syrup
  • 2 tablespoons (30ml) vegetable stock
  • 2 tablespoons coarse mustard
  • Roast vegetables to serve
Instructions
  1. Preheat oven to 200°C.
  2. Cut open gammon using a sharp flat knife.
  3. Heat oil in a saucepan; and add curry, couscous, apples, cranberries and nuts. Season well. Remove from pan and leave to cool.
  4. Once cool, stuff into gammon and secure with a kitchen string. Place onto roasting tin. Reduce oven to 160°C. Roast for 1 hour.
  5. In a bowl, combine syrup, stock and mustard. Pour over roast, and cook further until golden.
  6. Serve with vegetables.
