Stuffed Amagwinya With Chicken

  • 4 cups cake flour
  • 1sachet instant yeast
  • 3 tbsp castor sugar
  • a pinch of salt
  • 3 cups warm water
  • oil for frying
  • 2 tbsp oil
  • 1 tsp garlic, minced
  • 1 tsp fresh ginger, minced
  • 1 green chilli
  • 1 tsp ground turmeric
  • 1 cinnamon stick
  • 3 cups chicken breasts, cubed
  • ½ cup tomato sauce
  • ½ cup (125ml) stock
  • salt and pepper to taste
  • cucumber to serve
  • cherry tomatoes to serve
  1. Combine amagwinya ingredients in a bowl and form a sticky dough. Cover with a kitchen cloth and allow it to double in size.
  2. Heat oil and fry garlic, ginger and chilli until soft. Add turmeric, cinnamon, chicken, sauce and stock. Let it simmer until the sauce thickens.
  3. In a separate frying pan, heat the oil and spoon the dough into the hot oil. Let it cook for 4-5 minutes on each side.
  4. Once cooked, stuff amagwinya with the chicken mixture and serve.
