Rolled Chicken recipe

Prep time: 15 minutes

Cooking time: 30 minutes

Serves: 4

  • 4 chicken breasts, boneless
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 1 green pepper, thinly sliced
  • ½ cup (125ml) balsamic vinegar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon sesame seeds
  • Salt & pepper to taste
  1. Preheat oven to 180ºC.
  2. Cut chicken breast thinly lengthways and flatten with rolling pin.
  3. Meanwhile, in a bowl, mix peppers and season well.
  4. In another bowl, mix vinegar, honey, garlic, ginger and sesame seeds.
  5. Place pepper in the middle of flattened chicken. Roll to form sausage shape and secure with toothpicks. Place onto oven tray.
  6. Brush with honey mixture and grill for 25–30 minutes, basting every 4–5 minutes.
  7. Serve immediately.
