Roasted Butternut and Cranberry salad

Cooking time: 30 minutes

Serves: 6–8

  • 4 large butternuts, cubed
  • ½ teaspoon ground cinnamon
  • 2 tablespoons butter
  • 2 tablespoons honey
  • ½ cup (125ml) cranberry juice
  • 4 tablespoons walnuts, crushed
  • 3 tablespoons parsley, chopped
  • Pinch salt
  • 1 cup Feta cheese, crumbled
  1. Preheat oven to 180˚C.
  2. Place ingredients onto a baking tray, except cheese. Roast for 25–30 minutes or until cooked, but still crunchy.
  3. Sprinkle with cheese, and serve.
