RECIPE: Moroccan style hake

Prep time: 15 minutes

Cooking time: 30 minutes

Serves: 3–4

  • 6 hake steaks
  • 3 tablespoons (45ml) oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 tablespoon fresh ginger, finely chopped
  • 1 cinnamon stick
  • 3 tablespoons harissa paste
  • ½ cup (125ml) white wine
  • 1 cup (250ml) fish stock
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (15ml) honey
  • Salt and pepper
  • ½ cup sliced almond nuts
  • Couscous, for serving
  1. Heat oil. Add onion, garlic and ginger until fragrant.
  2. Add cinnamon stick, harissa, wine and fish stock. Cook until slightly thickened.
  3. Add hake steaks, lemon juice and honey. Season with salt and pepper. Cook for another 4–5 minutes. Sprinkle with sliced almond nuts.
  4. Serve with couscous.
