Pineapple float cocktail

Create a great treat to impress your loved ones using vanilla ice cream.

Prep time: 20 minutes

Serves: 3

  • 2 medium pineapples
  • ½ cup (125ml) tequila
  • 2 cups vanilla ice cream
  • 1 cup (250ml) pineapple juice or champagne
  • Whipped cream to serve
  • Lime slices to serve
  1. Cut and peel pineapples, and chop into small chunks.
  2. Blend until smooth and add tequila. Pour into glasses.
  3. Add ice cream, juice and cream. Finish with lime slices.
  4. Serve immediately.
