Ingredients
  • 1kg parsnips, thinly sliced
  • 1 large leek, thinly sliced
  • 2 cups thick chopped bacon, cooked
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 teaspoon powdered English mustard
  • 1½ cups (375ml) cream
  • 1 cup Cheddar cheese, grated
  • 1 cup feta cheese, cubed
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 200°C.
  2. Layer parsnips, leek slices and bacon in a lightly greased baking dish. Season well.
  3. In a saucepan, heat butter, and add flour and mustard. Whisk quickly to form a soft paste.
  4. Stir in cream and continue whisking to avoid lumps. Allow to thicken.
  5. Pour over parsnips, leek and bacon. Sprinkle cheeses and bake for 40–45 minutes or until cooked through.
