Make a delicious and fragrant curry with your leftover beans

Bean curry recipe

Prep time:  10 minutes

Cooking time: 15 minutes

Serves: 3

  • 2 cups leftover beans
  • 4 tablespoons (60ml) oil
  • 1 garlic clove, chopped
  • 1 thumb size fresh ginger, chopped
  • 1 tablespoon garam masala
  • 1 teaspoon ground turmeric
  • 1 star seed
  • 1 cinnamon stick
  • 1 onion, chopped
  • 1 tablespoon Durban curry powder
  • 1 onion, chopped
  • 2 tomatoes, finely chopped
  • 1 cup frozen peas, thawed
  • Handful fresh coriander, chopped
  • Salt and pepper to taste
  • 3 rolls to serve
  1. Heat oil in a frying pan. Add garlic and ginger. Fry until soft.
  2. Add spices, onion, tomatoes, beans and peas. Season with salt and pepper. Cover with lid and simmer for 8–10 minutes.
  3. Add coriander and serve with rolls.
