Lime & Pineapple Sorbet recipe

Try making this delicious sorbet without the use of an ice cream maker.

Prep time: 45 minutes

Serves: 4–6

  • 2 cups castor sugar
  • 2 cups (500ml) lime juice
  • 2 cups grated coconut
  • 2 cups canned crushed pineapple, drained
  • 1 cup pistachio nuts, crushed
  • 2 tablespoons orange rind
  1. In a saucepan, heat sugar and lime juice until sugar dissolves.
  2. Combine grated coconut, pineapple, nuts and orange rind in a blender. Blend until smooth.
  3. Add lime syrup into pineapple mixture. Mix well and transfer into a plastic container. Put into freezer.
  4. After 15 minutes, beat with a folk and put back into the freezer until set.
