Lime jam pudding


Make a yummy and tangy lime jam pudding in a flash with this recipe from Ntwenhle Gcabashe

Prep time: 15 minutes

Cooking time: 45 minutes

Serves: 4

  • ½ cups self-raising flour
  • Pinch bicarbonate of soda
  • ½ cup dark-brown sugar
  • 5 eggs
  • Juice of 1 lime
  • 1 tablespoon lime zest
  • 1 cup (250ml) milk
  • 1 cup (250ml) oil
  • ½ cup strawberry jam
  • Custard, for serving

Banana queen cakes 

  1. Preheat the oven to 180ºC.
  2. Sift flour and bicarbonate of soda in a large bowl. Add sugar.
  3. In a jug, whisk eggs, lime juice, zest, milk and oil. Divide half mixture into 4 lightly greased baking tins. Spoon jam and top with remaining mixture.
  4. Bake for 40–45 minutes or until cooked through.
  5. Serve warm or with custard.
