How to debone a fish

Follow these easy steps to debone your fish like a pro.

Step 1

If you do not have a fillet knife, use a sharp one. Rinse and pat-dry the fish with paper towel. Put it on the cutting board, with the bottom side up.2

 

Step 2

Position the knife behind the scale covering the gill. Lift it slightly away from the fish, and insert the knife. Cut downwards until it hits the backbone. Run it along the rib cage, separating the meat from the ribs.

Step 3

Keep cutting along the bones until the fillet is off the tail. Lift the fillet from the bones.3

Step 4

Be careful because some fish is delicate, and can fall apart if handled roughly. Repeat the process on the other side for another fillet.4
