Grilled Chicken And Peach Salsa Sandwich recipe

Interesting fact:  “focaccia” is a flat, oven-baked Italian bread. But you can always make your own South African bread with this recipe.

GRILLED CHICKEN AND PEACH SALSA SANDWICH
Ingredients
  • 1 large focaccia bread
  • 6-8 skinless chicken breasts
  • 4 tablespoons (60ml) oil
  • 4 tablespoons dried mixed herbs
  • 2 tablespoons minced garlic
  • Salt and pepper to taste
  • 2 cups fresh rocket
Instructions
  1. Heat a pan.
  2. In a bowl mix the oil, herbs, garlic and seasonings.
  3. Brush the chicken breast with oil mixture and grill for 3-4 minutes each side.
  4. Remove from heat and allow to rest.
  5. Meanwhile, in a small bowl mix the peaches, oil, onion, vinegar, sugar and rosemary.
  6. Arrange rocket and chicken onto your focaccia bread and spoon peach salsa over. Serve immediately.
