  • 1 medium snoek fish, cut lengthways and cleaned
  • 2 garlic cloves, chopped
  • Handful fresh coriander, chopped
  • 1 tablespoon fresh lime zest
  • ½ cup pine nuts, chopped
  • 2 tablespoons curry paste
  • 2 tablespoons butter, soften
  • 1 cup couscous, cooked
  • 1 cup spinach, chopped and cooked
  • 1 cup feta cheese, cubed
  • 1 egg, beaten
  • Salt and pepper
  • Kitchen foil
  • ½ cup (125ml) white wine
  • Lemon wedges to serve
  • Handful fresh thyme
  1. In a bowl, combine garlic, coriander, zest, nuts, curry paste, butter, couscous, spinach, feta and egg. Season with salt and pepper.
  2. Stuff filling between the fish. Carefully place fish at the centre of the foil, and fold the sides. Pour wine, lemon slices and thyme. Fold to form envelope shape. Place on braai and cook for 25–30minutes.
  3. Serve with lemon wedges.
