Make your samp extra special with this creamy samp and nuts recipe by Ntwenhle Gcabashe

Serves: 3

  • 2 cups samp
  • 2 cups peanuts
  • 1 cup (250ml) fresh cream
  • 2 bay leaves
  • 4 cups (1ℓ) vegetable stock
  • 4 tablespoons (60ml) butter, melted
  • 1 spring onion, finely chopped
  • Handful fresh sage
  • Handful fresh thyme, chopped
  • 1 cup mushrooms, sliced
  • Salt and pepper
  • Parmesan cheese, for serving

  1. In a large saucepan, cook samp, nuts, bay leaves and stock until soft.
  2. In a pan, heat butter and fry onion, sage, thyme and mushrooms.
  3. Add cream and samp. Season with salt and pepper. Cook until thickened.
  4. Serve with parmesan cheese.
