Creamy Chicken, Spinach and Pasta

Prep time: 15 minutes Cooking time: 15 minutes Serves: 3–4

  • 3 chicken breasts, cooked and chopped
  • 2 handfuls spinach, finely chopped and cooked
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • Salt and pepper
  • 3 cups (750ml) cream
  • 3 cups penne pasta, cooked
  • 1 cup feta cheese, crumbled
  • 1 cup cheddar cheese, grated
  • Handful fresh thyme, chopped
  1. Heat butter in a frying pan. Fry onion and garlic for 3–5 minutes or until soft.
  2. Add chicken and spinach, and stir. Season with salt and pepper.
  3. Add cream, pasta and cheeses. Cook for 8–10 minutes or until the cheeses have melted.
  4. Sprinkle with thyme, and serve.
