Ingredients
  • For meatballs:
  • 2 cups chicken breast, minced
  • 1 onion, grated
  • 1 tablespoon curry paste
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Handful coriander, chopped
  • Salt and pepper to taste
  • Ciabata bread to serve
  • Parmesan cheese, sliced to serve
  • For sauce
  • 1 tablespoon onion, chopped
  • 3 cups canned tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons sugar
  • Salt and pepper to taste
Instructions
  1. Preheat the oven to 200°C.
  2. In a bowl, combine all meatballs ingredients except bread and cheese. Form small balls and place onto baking tray. Bake until golden.
  3. Meantime, heat oil in frying pan. Fry onions, tomatoes, paste, sugar and season well. Let it simmer for 10-15 minutes.
  4. Slit open the bread, place meatballs and spoon sauce.
  5. Garnish with cheese and serve immediately.
