Carb-free meal: Base-free Quiche

Here’s a quick and easy carb-free meal that won’t leave you hungry.

Prep time: 15 minutes

Cooking time: 45 minutes

Serves: 6–8

  • 1 cup canned tuna, drained
  • 1 onion, chopped and cooked
  • 2 cups broccoli florets, cooked
  • 1 cup pumpkin, cubed and cooked
  • 1 cup feta cheese, cubed
  • 1 cup Cheddar, grated
  • 4 eggs, beaten
  • 1 cup (250ml) cream
  • Salt and pepper
  • Watercress leaves
  1. Preheat oven to 180ºC.
  2. In a lightly greased baking dish, mix tuna, vegetables and cheeses.
  3. In a jug, beat eggs, cream and seasoning. Pour over fish mixture.
  4. Bake for 40–45 minutes or until set.
  5. Serve warm with watercress leaves.
