Cabbage Layers

Prep time: 15 minutes Cooking time: 40 minutes Serves: 6

  • 12 white cabbage leaves, blanched
  • 2 tablespoons (30ml) oil
  • 2 garlic cloves, minced
  • 1 tablespoon cayenne pepper
  • 2 cups minced meat
  • 2 cups (500ml) tomato passata
  • 1 cup sliced mushrooms
  • 2 cups (500ml) white sauce
  • ½ cup cheese, grated
  • Fresh coriander, for serving
  1. Preheat oven to 200˚C.
  2. In a frying pan, heat oil. Fry garlic until soft.
  3. Add cayenne pepper, minced meat, passata and mushroom. Cook for 8–10 minutes and remove from heat.
  4. Spoon and spread mixture into baking dish. Layer cabbage leaves and white sauce. Continue layering until all are used. Sprinkle with cheese.
  5. Bake for 25–30 minutes. Serve with coriander.
