Brinjal and bacon quiche

Brinjal and bean curry

Prep time: 15 minutes Cooking time: 45 minutes Serves: 4–5

  • 2 cups brinjal, sliced and cooked
  • 2 cups bacon, chopped and grilled
  • 1 spring onion, chopped
  • Pinch cayenne pepper
  • Salt and pepper
  • 2 cups (500ml) cream
  • 3 eggs, beaten
  • 1 cup cheddar cheese, grated
  • Crumbled feta cheese, for serving
  1. Preheat the oven to 180˚C.
  2. In a large bowl, mix brinjal, bacon, onion and cayenne pepper. Season with salt and pepper.
  3. Place in an oven dish.
  4. Meanwhile, whisk cream, eggs and cheese together in a jug. Pour over brinjal mixture and bake for 40–45 minutes.
  5. Serve immediately with feta cheese.
