Berries & meringue swirls

Cooking time: 15 minutes

Serves: 6–8

  • 1 cup vanilla ice cream
  • 1 cup frozen berries, thawed
  • 8–10 meringues
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla essence
  • 4 tablespoons honey
  • ½ cup fresh pomegranates seeds
  • Raspberries coulis
  1. In a bowl, combine ice cream, zest, essence and honey.
  2. Spoon ice cream mixture into each meringue. Place into freezer. Just before serving, sprinkle with pomegranate and drizzle with coulis.
  3. Serve immediately.
