Banana queen cakes

Banana bread is not the only thing you can use bananas for when baking. These scrumptious banana queen cakes by Ntwenhle Gcabashe are quick and easy to make.

Prep time: 15 minutes

Cooking time: 30 minutes

Makes: 12

  • 1 cup banana, mashed
  • 1 1/2 cup self raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 cup castor sugar
  • Pinch salt
  • 250g butter, melted
  • 3 eggs, beaten
  • 1 teaspoon vanilla essence
  • 1 cup natural yoghurt

Jam muffins 

  1. Preheat oven to 180C.
  2. Sift flour, bicarbonate of soda, sugar and salt.
  3. in a separate bowl, whisk butter, eggs, vanilla essence and yoghurt. Pour over dry ingredients. Stir in banana. Mix well.
  4. Spoon into a lightly greased muffin pan. Bake for 25-30 minutes or until cooked through.
  5. Let it cool and serve.
