Make yummy jam muffins in a flash using this lovely recipe from Ntwenhle Gcabashe

Prep time: 15 minutes

Cooking time: 25 minutes

Serves: 12

  • 250g butter
  • 1 cup brown sugar
  • 1 cup avocado, mashed
  • 4 cups self raising flour
  • pinch salt
  • 4 eggs, beaten
  • 1 tablespoon vanilla essence
  • 1 1/2 cup coconut cream
  • 1 cup apricot jam

Sticky mini cakes 

  1. Preheat oven to 180C.
  2. Cream butter, sugar and avocado until smooth.
  3. Add flour and salt.

4. Add eggs, essence and coconut cream. Mix well to form smooth batter.

  1. Spoon half of batter in muffin pan, carefully add jam and then cover with batter. Bake for 20-25 minutes.
  2. Serve warm.
