3 easy and tasty cauliflower dishes to try

Our Food Editor Ntwenhle Gcabashe shares three easy cauliflower dishes, which prove that this vegetable is anything but boring. Pictures Dylan Swart

Try these dishes and impress your friends and family.

1. Cauliflower Patty

Cauliflower

Prep time: 25 minutes Cooking time: 20 minutes Makes: 4–5

  • 2 cups cauliflower, finely grated
  • 2 cups canned butter beans, drained and mashed
  • 1 cup breadcrumbs
  • 1 spring onion, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 egg, beaten
  • Salt and pepper
  • Tomato slices, for serving
  • Red onion slices, for serving
  • Pickles, for serving
  • Sweet chilli sauce, for serving
  1. Preheat oven to 180˚C.
  2. In a bowl, mix cauliflower, beans, breadcrumbs, onion, cumin and paprika.
  3. Add egg and season with salt and pepper.
  4. Shape into small patties and place onto an oven tray.
  5. Bake for 15–20 minutes.
  6. Serve immediately with tomato, onion, pickles and chilli sauce.

2. Cauliflower Chilli Bites

Prep time: 20 minutes Cooking time: 30 minutes Serves: 3–4

  • 5 cups cauliflower florets, cooked
  • Salt and pepper
  • ½ cup chilli sauce
  • 2 cups BBQ sauce
  • 1 tablespoon paprika
  • 1 tablespoon cayenne pepper
  • 2 tablespoons (30ml) oil
  • 3 tablespoons (45ml) soya sauce
  • 1 teaspoon brown sugar
  • Lime slices, for serving
  • Fresh watercress leaves, for serving
  1. Preheat oven to 180˚C.
  2. Season cauliflower with salt and pepper.
  3. Add chilli and BBQ sauces, paprika, cayenne pepper, oil, soya and sugar. Mix well.
  4. Transfer onto a baking tray and bake for 25–30 minutes or until crispy.
  5. Serve immediately with lime slices and watercress leaves.

3. Creamy Cauliflower

Cauliflower

Prep time: 10 minutes Cooking time: 35 minutes Serves: 4–5

  • 3 cups cauliflower florets, steamed
  • 1 cup broccoli florets, steamed
  • 3 Russian sausages, sliced
  • ½ cup fresh chives, chopped
  • Salt and pepper
  • 2 cups sour cream
  • 3 eggs, beaten
  • 1 cup Cheddar cheese, grated
  • ½ cup Parmesan cheese, grated
  1. Preheat oven to 200˚C.
  2. Mix cauliflower, broccoli, sausages and chives. Place into an in ovenproof dish, and season with salt and pepper.
  3. Whisk sour cream and eggs in a jug, and pour over cauliflower mixture.
  4. Sprinkle with cheeses and bake for 30–35 minutes.
  5. Serve immediately.
