Fruit Mincemeat Carrot Pudding

We’re getting loads of inspiration for cooking with our kids from the Clover Little Big Cook Off. Here is an exclusive recipe from episode nine of the popular TV show. The Sizzling Cooking Sisters team, made up of Lerato Lamola and her 13 year-old niece Oratile Leballo, shared this tasty pudding recipe with us.

Fruit Mincemeat Carrot Pudding

A rich dessert from the Clover Little Big Cook Off TV show.
Ingredients
  • 840g (6cups) cake flour
  • 30ml (6 tsp) bicarbonate of soda (Buffalo)
  • 250g Clover Springbok Butter
  • 140g (1 cup) grated carrot
  • 1 teaspoon ground cinnamon (Robertson’s) 5ml
  • 1 teaspoon ground ginger (Robertson’s) 5ml
  • 1 teaspoon vanilla essence (Robertson’s) 5ml
  • 6 eggs
  • 1 cup Clover Fresh Milk
  • 454g bottle fruit mincemeat (Safari)
Instructions
  1. In a bowl, mix all dry ingredients (flour, ginger, cinnamon and bicarbonate of soda)
  2. In another bowl, whisk together eggs, butter, vanilla essence, fruit mincemeat and carrot
  3. Combine all of them in one bowl
  4. Add milk to form a ball
  5. Spread butter inside the plastic, take ball mixture and put it in two plastic bags, fasten 
tight
  6. Boil 500ml water in the pot on the stove, and put the plastic in the boiling water pot
  7. Let it boil for 55 minutes, then take out and let it cool off a bit
  8. Cut into slices and serve with custard or ice cream
