Spice up your dessert game this festive season with a fresh twist! Mogau Seshoene, famously known as The Lazy Makoti, brings you a Summer Berry Trifle that’s as vibrant and delicious as it is easy to make. Perfect for sunny gatherings or indulgent moments, this layered delight will take center stage at your table.

Summer Berry Trifle

Our Summer Berry Trifle is packed with taste and it is the perfect treat to add some sparkle to your holiday festivities.

PREP TIME: 25 min

REFRIGERATION: 6 hours or overnight

SERVES: 8

Ingredients

  • ¾ cup strawberry or raspberry jam
  • 2 cups sliced strawberries
  • 2 cups raspberries
  • 2 cups blueberries
  • 1½ cups whipping cream, cold
  • 1 tub cream cheese, at room temperature
  • ¾ cup castor sugar
  • 1 tsp vanilla essence
  • 1 packet of Boudoir biscuits, extra
  • Berries and fresh mint to garnish

Method

  1. Heat the jam in a large bowl in the microwave until hot, about 1 minute. Add the fresh berries and toss to coat.
  2. In a separate large bowl, whip the cream until stiff peaks form, about 4 minutes. Set aside.
  3. In a separate large bowl, beat the cream cheese with the sugar until smooth, about 3 minutes. Add the vanilla essence and combine well.
  4. Cover the bottom of a trifle dish or deep glass bowl with a layer of biscuits, breaking into pieces as necessary. Follow with a third of the berry-jam mixture, then a third of the cream cheese mixture. Continue layering in this way (biscuits, berry-jam mixture, cream cheese mixture), ending with the cream cheese mixture.
  5. Garnish with berries and mint. Refrigerate for at least 6 hours.
