Recipe: Salmon Salad

Try this salmon salad recipe for your dinner or lunch prep this week. Enjoy this healthy light dish that is perfect for anytime!

This hassel-free recipe is packed with protein and healthy fats for your nutritional needs. It is easy to make and does not take up much of your time.

Time: 20 minutes

Ingredients include:
• 1 Salmon fillet, defrosted/fresh
• 1 tsp fresh garlic and chilli mix
• 1 tsp balsamic reduction
• 1/4 cup chopped cherry tomatoes
• 1/4 cup chopped cucumber
• 1/4 cup chopped red onion
• 1/4 round of feta
• 8 pitted olives
• 1/2 an avocado
• A few sprigs of fresh dill
• A squeeze of lemon
• Rocket leaves

Method:
• In a small bowl combine the garlic chilli mixture with balsamic reduction

• Drizzle the sauce over the salmon and season with salt and pepper

• Place in a pre-heated oven on 180 degrees for 12-15 minutes

• While your salmon is in the oven combine all your salad ingredients

• Serve the salmon warm/cold with the fresh salad ingredients
