Recipe: Egg White Omelette

Why not try an spice up your omelette making skills with this egg white omelette recipe.

This recipe is easy to follow and requires minimal ingredients and effort, making it the perfect recipe to try out.

You can make this recipe using egg whites only or opt to add the yolk in, either way you’ll be set for the perfect breakfast treat.

Ingredients:
•3 egg whites
• 1/4 red onion, chopped
• 1/4 cup cherry tomatoes, chopped
• 1/4 cup mushrooms, chopped
• 1/4 avocado
• Chilli flakes, to taste
• Salt and pepper
•Optional garnish: micro-greens

Method:
– Cook your onion, tomatoes and mushrooms on a pan until soft

– Lightly spray pan again with a little spray and cook . In a bowl, whisk egg whites with electric beaters until soft peaks form.

– Add egg whites to the pan and cook over medium heat for 2 minutes or until nearly set. Remember to season.

– Add veg filling over half the omelette and cook for further 3 minutes or until the base is golden.

– Fold the omelette to enclose the filling

– Serve warm with some rye toast, fresh avocado and micro-greens ?
