Recipe: Blueberry Muffin oat bars

This recipe is perfect for those who love to prepare their meals before hand.

Prepare this recipe in advance and grab these oat bars on your way to work.

Making this recipe will give you three breakfast worth of delicious blueberry flavoured oats.

Ingredients:
90g oats
70g oat or almond flour
40g @macr0mike vanilla buttercream protein powder (discount: amb-Miranda) or extra flour
1 tsp baking powder
1 egg
240 ml almond milk
1 tsp lemon juice
80ml maple syrup
2 tbs butter or coconut oil, melted
1 tsp vanilla extract
1-2 cups blueberries

Method:
1. Mix all ingredients (except blueberries) together in a bowl. Set aside for 20 mins for oats to soften.
2. Preheat oven to 180 degrees Celsius and lightly grease a muffin tin or baking dish.
3. Fold blueberries into the batter until just combined. Spoon in muffin tin/baking dish.
4. Bake for 20-25 mins for muffins or 30 mins for slice.

Makes 9 to 12, perfect for snacks or an on the go breaky!
