Icy Treats

Don’t let the hot weather get you down. Our Food Editor Ntwenhle Gcabashe shows you how to beat the heat and keep cool with these delicious cold treats.

1. Blueberry & Strawberry Lollipops 


Prep time: 5 minutes
Serves: 6

2 cups fresh blueberries,
crushed
1 cup fresh strawberries,
crushed
2 cups natural yoghurt
2 tablespoons castor sugar
Mixed berries, for serving

1. Blend berries, yoghurt and sugar until smooth.
2. Pour into lollipop containers and freeze.
3. Serve with mixed berries.

2. Milo Slush 

Prep time: 10 minutes
Serves: 4

  • 1 cup Milo powder
  • 1 teaspoon cocoa powder
  • ½ cup grated chocolate
  • ½ cup (125ml) milk
  • 3 cups (750ml) cream
  •  2 cups ice cubes
  • Chocolate biscuits, for serving

1. In a saucepan, heat Milo, cocoa, chocolate and milk for 8–10 minutes. Leave to cool.
2. Transfer into a blender together with cream and ice cubes. Mix until smooth.
3. Serve in dessert glasses, topped with biscuits.

3. Peach Slush

Prep time: 5 minutes
Serves: 4

  • 3 cups fresh peaches, deseeded, peeled and chopped
  • 2 tablespoons castor sugar
  • 1 cup (250ml) lemonade
  • 1 cup ice cubes
  • Raspberries, for serving
  • Peach slices, for serving

1. Place peaches, sugar, lemonade and ice cubes in a blender. Puree until smooth.
2. Serve immediately with raspberries, peach slices and mint leaves.

4. Icy Coconut Bar

Prep time: 15 minutes
Makes: 12 slices

  • 1 cup desiccated coconut
  • 1 cup (250ml) coconut oil
  • 4 tablespoons honey
  • ½ cup Maltesers chocolate, crushed
  • Chocolate sauce
  • Mixed berries, for serving

1. In a bowl, mix coconut, oil, honey and chocolate.
2. Line an oven tray with baking paper. Spoon coconut mixture into tray and press down. Cut into squares and freeze.
3. Drizzle with chocolate sauce and serve with mixed berries.

5. Mixed Fruit Frozen Yoghurt

  • 1 apple, peeled, chopped and frozen
  • 1 kiwi fruit, peeled, chopped and frozen
  • 2 bananas, chopped and frozen
  • 2 tablespoons honey
  • 1 cup natural yoghurt
  • Ice cream cones
  • Granadilla pulp
  1. Blend all fruits, honey, and yoghurt until smooth.
  2. Freeze overnight
  3. Scoop into cones and drizzle with pulp before serving.
