Lemony Spicy Rice

Ingredients
  • 4 cups cooked rice
  • 3 tablespoons butter
  • 1 red onion, chopped
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 cup minced meat
  • ½ cup tomato paste
  • 4 medium courgettes, chopped
  • 3 tablespoon flaked almonds
  • ½ fresh lemon, squeezed
  • 1 tablespoon zest
  • Handful baby spinach
  • Salt and pepper to taste
Instructions
  1. Heat butter and onion. Cook onions until soft.
  2. Add spices, paprika, minced meat and paste.Cook until mince is well done.
  3. Add courgettes, almonda, lemon juice, zest ,spinach and rice. Season well.
  4. Serve immediately.
