Chicken Meatballs

Ingredients
- For meatballs:
 - 2 cups chicken breast, minced
 - 1 onion, grated
 - 1 tablespoon curry paste
 - 1 cup breadcrumbs
 - 2 eggs, beaten
 - Handful coriander, chopped
 - Salt and pepper to taste
 - Ciabata bread to serve
 - Parmesan cheese, sliced to serve
 - For sauce
 - 1 tablespoon onion, chopped
 - 3 cups canned tomatoes
 - 2 tablespoons tomato paste
 - 2 tablespoons sugar
 - Salt and pepper to taste
 
Instructions
- Preheat the oven to 200°C.
 - In a bowl, combine all meatballs ingredients except bread and cheese. Form small balls and place onto baking tray. Bake until golden.
 - Meantime, heat oil in frying pan. Fry onions, tomatoes, paste, sugar and season well. Let it simmer for 10-15 minutes.
 - Slit open the bread, place meatballs and spoon sauce.
 - Garnish with cheese and serve immediately.
