Real or fake: What is the deal with yellow watermelon?

If summer had a flavour, it would be watermelon – cold, crisp and cut into generous wedges for anyone wandering through the kitchen. But every now and then, a sunshine-yellow version arrives on the scene and leaves everyone asking the same thing: Is this real? Absolutely. And it deserves a moment in the spotlight.

A splash of sunshine

Yellow watermelon owes its golden flesh to beta-carotene, the same naturally occurring pigment that makes carrots bright orange.

While red watermelon gets its colour from lycopene, this sunny variety follows its own path. The result? A fruit that looks like it’s been kissed by summer.
