Recipe: low calorie, high fiber pancakes

Start your day with these low calorie, high fiber pancakes.

They are so easy to make and you can choose any toppings you would like. Recipe by @cape.townfoods on Instagram.

Recipe makes 18 medium sized pancakes.

Ingredients:

1 and 3/4 cup oat bran – if you don’t have oat bran just blend normal oats
1.5 tablespoons xylitol – or any sweetener of choice
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
1 cup milk – or milk substitute
1 teaspoon vanilla extract
2 teaspoons apple cider vinegar
1 tablespoon oil
2 eggs

Method:

In a mixing bowl combine the oat bran, xylitol, baking powder, cinnamon & salt.

In a separate bowl combine the milk, oil, eggs, vanilla & apple cider vinegar.

Slowly add the wet ingredients to the dry ingredients & stir until combined. Do not over mix.

Let the mixture stand for 5-7 minutes in order to thicken.

Spray a pan with spray & cook and place on medium heat. Spoon portions of the batter onto the pan & wait for bubbles to form before you flip.

Serve with whatever you’re feeling e.g. banana, macadamia butter, toasted almonds, blueberries, coconut chips, coconut cream, maple syrup
