Recipe: Tomato & chilli Portuguese style sardines on toast

Looking for something new to try for lunch? Why not try this toasted sourdough, tangy sardines, rich tomato and chilli sauce recipe.

According to Healthline, sardines are packed with nutrients as they are a great source of protein, calcium, minerals, omega-3 fatty acids and vitamins. This recipe is a great way to add some sardines into your diet.

This is so easy to make and great for breakfast or lunch.

Ingredients include: 
Tinned sardines in olive oil (& tomato sauce if you can get it)
1 small garlic clove, finely sliced
10(ish) cherry tomatoes
1/2 tsp smoked paprika
1/2 lemon, juice & zest
Fresh parsley, chopped
Spinach (optional)
Chilli flakes or ground chilli
Olive oil
Bread of choice (I went for sourdough)

Instructions: 
Heat olive oil in a small pan on a medium-low heat. Add the finely sliced garlic and cook for 2 minutes until starting to soften
Add the whole cherry tomatoes with the paprika and a pinch of salt and let them simmer gently for 10-15 minutes until they start to break down and release their juices
Add the sardines to the tomatoes and allow them to fall apart in the sauce. Gently warm for a few minutes
Add a squeeze of 1/2 lemon juice
Stir through some spinach and allow to wilt – if using.
Toast your bread & spoon over the tomatoey sardines.
Sprinkle with a load of fresh parsley, some grated lemon zest & a drizzle of evoo
