3 easy-peasy desserts

These fuss-free mouth-watering desserts are the perfect way to end your lunch or dinner. By Ntwenhle Gcabashe Pictures Dylan

1. Berries & Ice Cream Cake

Prep time: 10 minutes

Serves: 5–6

  • 1 cup vanilla ice cream
  • 1 cup meringue, crushed
  • ½ cup white chocolate, chopped
  • 1 cup cream, whipped
  • Mixed berries, for serving
  • Chocolate sauce, for serving
  1. Mix ice cream, meringue, chocolate and cream in a bowl.
  2. Cover with plastic wrap and freeze.
  3. Drizzle with chocolate sauce, and serve with mixed berries.

2. Rich Tiramisu

Prep time: 15 minutes

Serves: 5–6

  • 1 chocolate sponge, sliced in half
  • ½ cup strong espresso
  • 2 cups mascarpone
  • 2 cups cream cheese
  • 1 cup (250ml) cream
  • 1 cup condensed milk
  • Cocoa, for dusting
  • Mint leaves, for serving
  1. In a bowl, whisk mascarpone, cream cheese, cream and condensed milk until smooth.
  2. On a serving platter, place one chocolate sponge layer. Using a skewer, poke holes in cake. Pour half of coffee and spread half of the cream filling on the cake.
  3. Top with another cake layer and repeat step 2.
  4. Dust with cocoa. Refrigerate until set.
  5. Serve with mint leaves.

3. 5-Minute Mousse Cake

Prep time: 15 minutes

Serves: 5–6

  • 14 finger biscuits
  • ½ cup (125ml) orange juice
  • 1 cup (250ml) cream
  • 2 tablespoons (30ml) vanilla extract
  • ½ cup castor sugar
  • 1 tablespoon orange zest
  • Grated chocolate, for serving
  • Pomegranate seeds, for serving
  1. Line baking tin with kitchen wrap.
  2. In a bowl, whisk cream until stiff. Add vanilla extract, castor sugar and orange zest.
  3. In a separate bowl, pour orange juice, dip biscuits and line them on the sides and bottom of the baking tin.
  4. Spoon the cream mixture on top of the biscuits.
  5. Refrigerate until set.
  6. Serve with grated chocolate and pomegranate seeds.
