Beetroot and Mango Smoothie

Prep time: 5 minutes Serves: 4

  • 2 cups cooked beetroot, finely grated
  • 2 cups mango, peeled and chopped
  • 1 banana, chopped
  • Pinch ground cinnamon
  • 4 tablespoons (60ml) honey
  • 1 cup (250ml) coconut cream
  • 1 cup blueberries
  • 1 cup raspberries
  • Mint, for serving
  1. Blend mango, banana, cinnamon, honey and coconut cream until smooth. Pour into serving cups.
  2. Blend beetroot, blueberries and raspberries until smooth. Leave some berries for garnishing.
  3. Pour on top of the mango mixture.
  4. Garnish with fresh berries and mint leaves.
