- 4 tablespoons (60ml) oil
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, minced
- ½ cup fresh curry leaves
- 2 tablespoons turmeric powder
- 1 tablespoon ground cumin
- 4 cups watermelon, cubed.
- In a frying pan, heat the oil.
- Add the garlic, ginger and curry leaves. Fry for 2-3 minutes.
- Add the turmeric and cumin. Cook for 2 minutes.
- Add the melon and cook for a further 2-3 minutes. Serve with rice.
