Roasted peaches make a lovely summer dessert. Take advantage of fresh seasonal summer fruits and enjoy this guilt-free dessert.

ROASTED PEACHES AND ICE CREAM

Ingredients
  • 6-8 peaches, halved and pips removed
  • 1 cup pistachio nuts, chopped
  • 1 cup coconut flakes
  • 4 tablespoons castor sugar
  • ½ cup butter.
Instructions
  1. Preheat the oven to 180?C.
  2. In a bowl, mix the nuts, coconut, sugar and butter.
  3. Spoon this mixture into peach halves and roast for 20-25 minutes.
  4. Serve warm with ice cream.
