One Pot Chicken and Spaghetti

Prep time: 20 minutes Cooking time: 50 minutes Serve: 4 – 5 Medium

  • Half a 500g packet FATTI’S & MONI’S Spaghetti, cooked
  • 8 – 10 medium chicken thighs, boneless
  • 2 tablespoon (30ml) oil
  • 1 onion, finely chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon paprika
  • 1 tablespoon ground cinnamon
  • 1 large carrots, roughly chopped
  • 1 tablespoon tomato paste
  • 1 large tomato, chopped
  • 2 cups (500ml) chicken stock
  • 2 cups mushrooms
  • Salt and pepper to taste
  1. Bring a pot of water to the boil. Add a pinch of salt and teaspoon of oil. Add FATTI’S & MONI’S Spaghetti and boil till cooked.
  2. In a frying pan, heat oil and fry onion, garlic and ginger until soft.
  3. Add paprika, cinnamon and chicken.
  4. Add carrots, tomato, tomato paste and stock. Let simmer until chicken is cooked through.
  5. Add mushrooms and cooked FATTI’S & MONI’S Spaghetti, mix well. Simmer for another 8 – 10 minutes.
  6. Serve immediately.
