Polony & Sweet corn Quiche

125g ENTERPRISE No Pork French Polony, cubed

1 cup frozen sweet corn, thawed

1 roll short pastry

2 tablespoon fresh thyme, finely chopped

½ medium butternut, cubed and cooked

3 eggs, beaten

2 cups (500ml) cream

½ cup cheddar cheese, grated

Salt and pepper to taste

Method:

  1. Preheat the oven to 200˚C.
  2. In a bowl, mix sweet corn, thyme, butternut and ENTERPRISE No Pork French Polony.
  3. Meanwhile, roll out pastry onto floured surface. Cut out pastry and fit into light greased baking tray.
  4. Spoon polony mixture into pastry.
  5. In a jug, whisk eggs, cream and cheese. Pour over polony mixture. Bake for 40 – 45 minutes.
  6. Serve warm or room temperature.
